Ingredients

  • Chinese eggplant - 2 medium (about 300g)
  • Soy sauce (gluten-free) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Chili oil - 1 teaspoon
  • Brown sugar - 1 teaspoon
  • Spring onions - 2, chopped
  • Sesame seeds - 1 tablespoon, toasted

Steps

  1. Preheat the grill to medium-high heat.
  2. Wash the eggplants and slice them lengthwise into halves or quarters, depending on their size.
  3. In a mixing bowl, combine the soy sauce, sesame oil, minced garlic, grated ginger, chili oil, and brown sugar to create the marinade.
  4. Add the eggplant halves to the bowl and coat them well with the marinade. Let them marinate for about 15 minutes.
