Ingredients

  • Chicken thigh - 200 grams, boneless and skinless
  • Ginger - 10 grams, sliced
  • Garlic - 3 cloves, minced
  • Spring onion - 2 stalks, chopped
  • Soy sauce - 30 ml
  • Sesame oil - 10 ml
  • White pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Rice - 150 grams, uncooked
  • Water - 300 ml
  • Coriander - a handful, for garnish

Steps

  1. Rinse the uncooked rice in cold water until the water runs clear, then soak it for 30 minutes.
  2. In a pot, add the soaked rice and 300 ml of water, bring it to a boil, then reduce to low heat, cover, and let it steam for about 18-20 minutes until cooked.
  3. While the rice is cooking, cut the chicken thigh into bite-sized pieces and marinate it with soy sauce, sesame oil, white pepper, and salt for 10-15 minutes.
  4. In a skillet, heat a small amount of oil over medium heat, then add the sliced ginger and minced garlic; sauté until fragrant.
  5. Add the marinated chicken to the skillet and cook until it is browned and cooked through, about 8-10 minutes.
  6. Stir in the chopped spring onion and cook for an additional 2 minutes.
  7. Once the rice is done, fluff it with a fork and divide it into two bowls.
  8. Top the rice with the chicken mixture and garnish with fresh coriander.
