Ingredients
- Whole wheat pizza dough - 200 grams
- Low-sodium chicken broth - 100 ml
- Shiitake mushrooms - 100 grams, sliced
- Baby bok choy - 100 grams, chopped
- Carrots - 50 grams, julienned
- Bell pepper (red or green) - 50 grams, sliced
- Firm tofu - 100 grams, cubed
- Green onions - 2 stalks, chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Chili paste - 1 teaspoon (optional)
- Mozzarella cheese - 100 grams, shredded
- Fresh cilantro - for garnish
Steps
- Preheat the oven to 220°C (428°F).
- Roll out the whole wheat pizza dough on a floured surface to fit your pizza stone or baking sheet.
- Transfer the rolled-out dough to the prepared pizza stone or baking sheet.
- In a small pot, heat the low-sodium chicken broth over medium heat and add the minced garlic, ginger, and soy sauce. Allow it to simmer for 2-3 minutes.
- Add the shiitake mushrooms, baby bok choy, carrots, bell pepper, and tofu to the pot. Cook for an additional 5-7 minutes until the vegetables are just tender.
- Stir in the sesame oil and chili paste (if using) to the pot mixture.
- Spread the vegetable and tofu mixture evenly over the pizza dough, leaving a small border around the edges.
- Sprinkle the shredded mozzarella cheese on top of the vegetable mixture.
- Bake in the preheated oven for 12-15 minutes, or until the cheese is melted and bubbly and the crust is golden brown.
- Remove from the oven, garnish with chopped green onions and fresh cilantro, and allow to cool slightly before slicing.
