Ingredients

  • Whole wheat pizza dough - 200 grams
  • Low-sodium chicken broth - 100 ml
  • Shiitake mushrooms - 100 grams, sliced
  • Baby bok choy - 100 grams, chopped
  • Carrots - 50 grams, julienned
  • Bell pepper (red or green) - 50 grams, sliced
  • Firm tofu - 100 grams, cubed
  • Green onions - 2 stalks, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Chili paste - 1 teaspoon (optional)
  • Mozzarella cheese - 100 grams, shredded
  • Fresh cilantro - for garnish

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Roll out the whole wheat pizza dough on a floured surface to fit your pizza stone or baking sheet.
  3. Transfer the rolled-out dough to the prepared pizza stone or baking sheet.
  4. In a small pot, heat the low-sodium chicken broth over medium heat and add the minced garlic, ginger, and soy sauce. Allow it to simmer for 2-3 minutes.
  5. Add the shiitake mushrooms, baby bok choy, carrots, bell pepper, and tofu to the pot. Cook for an additional 5-7 minutes until the vegetables are just tender.
  6. Stir in the sesame oil and chili paste (if using) to the pot mixture.
  7. Spread the vegetable and tofu mixture evenly over the pizza dough, leaving a small border around the edges.
  8. Sprinkle the shredded mozzarella cheese on top of the vegetable mixture.
  9. Bake in the preheated oven for 12-15 minutes, or until the cheese is melted and bubbly and the crust is golden brown.
  10. Remove from the oven, garnish with chopped green onions and fresh cilantro, and allow to cool slightly before slicing.
