  • Tofu (firm) - 100 grams, cubed
  • Carrot - 1 medium, julienned
  • Bell pepper (red) - 1 medium, sliced
  • Mushrooms (shiitake or button) - 100 grams, sliced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Green onions - 2, sliced
  • Cilantro - a handful, chopped
  • Sesame oil - 1 tablespoon
  • Cornstarch - 1 tablespoon (mixed with 2 tablespoons of water for thickening)

Steps

  1. Soak the rice noodles in hot water for 10-15 minutes until softened, then drain and set aside.
  2. In a large pan or wok, heat the sesame oil over medium heat, then add the minced garlic and ginger, sautéing for 1-2 minutes until fragrant.
  3. Add the cubed tofu to the pan, cooking until golden brown on all sides, about 5-7 minutes.
  4. Stir in the julienned carrot, sliced bell pepper, and mushrooms, cooking for another 5 minutes until the vegetables are slightly tender.
  5. Pour in the vegetable broth, soy sauce, rice vinegar, and chili paste, bringing the mixture to a simmer.
  6. Add the soaked noodles to the pan, stirring well to combine all ingredients.
  7. Mix in the cornstarch slurry to thicken the sauce, cooking for an additional 2-3 minutes until the sauce is glossy.
  8. Garnish with sliced green onions and chopped cilantro before serving.
