  • Red bell pepper - 1, thinly sliced
  • Fresh cilantro - 30 grams, chopped
  • Fresh mint - 10 grams, chopped

  • Olive oil - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Apple cider vinegar - 1 tablespoon
  • Salt - to taste

Steps

  1. Start by poaching the chicken breast in a saucepan with water for about 15-20 minutes or until fully cooked. Remove and let it cool, then slice it into thin strips.

  3. In a large bowl, combine the sliced chicken, cucumber, carrot, red bell pepper, cilantro, mint, and basil.
  4. In a small bowl, whisk together the olive oil, sesame oil, apple cider vinegar, salt, and black pepper to create a dressing.
  5. Pour the dressing over the salad and toss gently to combine all ingredients evenly.
  6. Serve immediately, garnished with sesame seeds.
