- Green bell pepper - 1 small, diced
- Red onion - 1 small, diced

Steps
- Preheat the oven to 200°C (400°F).
- Slice the eggplant into 1 cm thick rounds and sprinkle with salt. Let them sit for 10 minutes to draw out moisture.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add the ground halal meat to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.
- Stir in soy sauce, Chinese five-spice powder, diced bell pepper, and red onion. Season with salt and black pepper to taste. Cook for an additional 3-4 minutes until the vegetables are tender.
- Rinse the eggplant slices under cold water to remove excess salt and pat them dry with a paper towel.
- On a baking tray lined with parchment paper, arrange the eggplant slices in a single layer. Brush the tops with the remaining olive oil.
- Spoon the meat and vegetable mixture generously over each eggplant slice, then top with shredded mozzarella cheese.
- Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and garnish with fresh basil before serving.
