- Basmati rice - 150 grams
- Water - 300 ml
- Carrot - 1 medium, diced
- Green bell pepper - 1 medium, diced
- Peas - 50 grams (fresh or frozen)
- Spring onions - 2, chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Vegetable oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Chili flakes - 1/2 teaspoon (optional)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak for 20 minutes.
- In a saucepan, combine the soaked rice and 300 ml of water. Bring to a boil, then reduce heat to low, cover, and let simmer for 15 minutes or until rice is cooked and water is absorbed. Remove from heat and let it sit covered for 5 minutes.
- While the rice is cooking, heat vegetable oil and sesame oil in a large skillet or wok over medium-high heat.
- Add minced garlic and ginger to the skillet and sauté for about 30 seconds until fragrant.
- Stir in the diced carrots, green bell pepper, and peas. Cook for 3-4 minutes until the vegetables are slightly tender but still crisp.
- Add the cooked rice to the skillet along with soy sauce, salt, black pepper, and chili flakes (if using). Stir-fry for another 2-3 minutes until everything is well combined and heated through.
- Finally, fold in the chopped spring onions, mix well, and serve hot.
