  • Sichuan peppercorns - 1 teaspoon
  • Star anise - 2 pieces
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Green onions - 2 stalks, chopped
  • Sesame oil - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Rice wine (Shaoxing wine) - 1 tablespoon
  • Cooking oil - 1 tablespoon

Steps

  1. Preheat your oven to 200°C (390°F).
  2. In a bowl, mix the minced garlic, minced ginger, chopped green onions, sesame oil, black pepper, and rice wine to create a marinade.
  3. Add the chicken thighs to the marinade, ensuring they are well coated. Let them marinate for at least 30 minutes.
  4. In a large mixing bowl, combine the coarse sea salt, Sichuan peppercorns, and star anise.
  5. Spread half of the salt mixture evenly in a baking dish.
  6. Place the marinated chicken thighs on top of the salt layer and cover them completely with the remaining salt mixture, ensuring no chicken is exposed.
  7. Drizzle a little cooking oil over the salt-covered chicken.
  8. Bake in the preheated oven for 40 minutes, or until the chicken is cooked through and tender.
  9. Remove from the oven and carefully crack open the salt crust using a spoon or knife.
