Ingredients

  • Hakka noodles - 200 grams
  • Vegetable oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch, minced
  • Onion - 1 medium, sliced
  • Capsicum (bell pepper) - 1 medium, julienned
  • Carrot - 1 medium, julienned
  • Cabbage - 100 grams, shredded
  • Green onions - 2, chopped
  • Soy sauce - 2 tablespoons
  • Chili sauce - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Boil water in a large pot, add a pinch of salt, and cook the Hakka noodles according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process.
  2. In a large wok or frying pan, heat the vegetable oil over medium-high heat. Add the minced garlic and ginger, and sauté for about 30 seconds until fragrant.
  3. Add the sliced onion to the pan and stir-fry for 2 minutes until it becomes translucent.
  4. Add the julienned capsicum, carrot, and shredded cabbage to the pan. Stir-fry for an additional 3-4 minutes until the vegetables are slightly tender but still crisp.
  5. Add the cooked Hakka noodles to the pan along with the soy sauce, chili sauce, salt, and black pepper. Toss everything together gently to combine and heat through for about 2-3 minutes.
  6. Finally, stir in the chopped green onions and drizzle with lemon juice. Give it a final toss and serve hot.
