Ingredients

  • Naan bread - 2 pieces
  • Bell pepper (mixed colors) - 1 cup, sliced
  • Onion - 1 medium, sliced
  • Mushrooms - 1 cup, sliced
  • Carrot - 1 medium, julienned
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch, minced
  • Soy sauce - 2 tablespoons
  • Chili sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Green onions - 2, chopped
  • Coriander leaves - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a pan, heat sesame oil over medium heat and sauté the minced garlic and ginger until fragrant.
  3. Add the sliced onions, bell peppers, mushrooms, and carrots to the pan. Stir-fry for about 5-7 minutes until the vegetables are tender.
  4. Pour in the soy sauce and chili sauce, and season with salt and black pepper. Mix well and cook for another 2-3 minutes.
  5. Place the naan bread on a baking sheet. Evenly distribute the stir-fried vegetable mixture on top of each naan.
  6. Bake in the preheated oven for 8-10 minutes, or until the naan is crispy and the edges are golden.
  7. Remove from the oven and garnish with chopped green onions and coriander leaves before serving.
