Ingredients
- Chicken (preferably halal) - 400g
- Jasmine rice - 1 cup (200g)
- Water - 1.5 liters
- Garlic - 3 cloves, minced
- Ginger - 1 piece (about 20g), sliced
- Cucumber - 1 small, sliced
- Spring onions - 2, chopped
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Chili sauce - 1 tablespoon
- Salt - to taste
- Pepper - to taste
Steps
- In a pot, bring 1.5 liters of water to a boil, add the chicken, ginger, and garlic. Reduce to a simmer and cook for about 30-40 minutes until the chicken is cooked through.
- Once cooked, remove the chicken and set aside. Reserve the broth for cooking the rice.
- In a separate pot, heat a tablespoon of oil and sauté half of the minced garlic until fragrant.
- Add the rinsed jasmine rice to the pot, stirring to coat the rice with the oil and garlic. Pour in 1.5 cups of the reserved chicken broth and bring to a boil.
- Reduce the heat to low, cover, and cook for about 15 minutes until the rice is fluffy and cooked through.
- While the rice is cooking, prepare the sauce by mixing soy sauce, sesame oil, and the remaining minced garlic. Adjust seasoning with salt and pepper.
- Slice the poached chicken and serve it over the rice. Garnish with cucumber slices, chopped spring onions, and serve with the dipping sauce and chili sauce on the side.
