Ingredients
- Chicken breast - 300 grams
- Water - 1 liter
- Ginger - 10 grams, sliced
- Garlic - 2 cloves, smashed
- Salt - 1 teaspoon
- Jasmine rice - 150 grams
- Sesame oil - 1 tablespoon
- Cucumber - 1/2, sliced
- Spring onions - 2, chopped
- Soy sauce - 2 tablespoons
- Chili sauce - 1 tablespoon
Steps
- In a pot, add 1 liter of water, ginger, garlic, and salt. Bring to a boil.
- Once boiling, add the chicken breast. Reduce heat and simmer for 25 minutes until cooked through.
- Remove the chicken and let it rest. Reserve the broth for later use.
- In another pot, rinse the jasmine rice under cold water until the water runs clear. Cook the rice in 300 ml of the reserved chicken broth according to package instructions (usually 15-20 minutes).
- Once the rice is cooked, fluff it with a fork and drizzle with sesame oil.
- Slice the poached chicken breast and serve it over the rice with cucumber slices and chopped spring onions.
- In small bowls, serve soy sauce and chili sauce as dipping options.
