Ingredients

  • all-purpose flour - 200 grams
  • water - 100 ml
  • cabbage - 100 grams, finely chopped
  • carrot - 50 grams, grated
  • shiitake mushrooms - 50 grams, finely chopped
  • green onions - 2, finely sliced
  • ginger - 1 teaspoon, minced
  • garlic - 1 clove, minced
  • soy sauce - 1 tablespoon
  • sesame oil - 1 teaspoon
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • oil for frying - 2 tablespoons

Steps

  1. In a mixing bowl, combine the all-purpose flour and water, knead until smooth, and let it rest for 20 minutes covered with a damp cloth.
  2. In another bowl, mix the chopped cabbage, grated carrot, chopped shiitake mushrooms, green onions, minced ginger, minced garlic, soy sauce, sesame oil, salt, and black pepper until well combined.
  3. Roll out the rested dough on a floured surface until thin, then cut into 8-10 cm circles.
  4. Place a spoonful of the vegetable filling in the center of each dough circle, fold the dough over to create a half-moon shape, and pinch the edges to seal tightly.
  5. Heat 1 tablespoon of oil in a non-stick skillet over medium heat, then place the dumplings in the skillet and fry until the bottoms are golden brown, about 3-5 minutes.
  6. Add 100 ml of water to the skillet, cover immediately, and steam the dumplings for about 5-7 minutes until the water is evaporated.
  7. Remove the lid, let the dumplings fry for another 1-2 minutes to crisp up the bottom, then transfer to a plate and serve hot.
