Ingredients

  • Rice noodles - 200 grams
  • Chicken breast - 200 grams, thinly sliced
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Spring onions - 2, chopped
  • Carrot - 1 medium, julienned
  • Bell pepper - 1 medium, julienned
  • Cabbage - 100 grams, shredded
  • Coconut aminos - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Soak the rice noodles in warm water for about 20 minutes or until softened, then drain and set aside.
  2. In a large skillet or wok, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
  3. Add the sliced chicken breast to the skillet and cook for 5-7 minutes until fully cooked and no longer pink.
  4. Stir in the julienned carrot, bell pepper, and shredded cabbage to the skillet, cooking for an additional 3-4 minutes until the vegetables are tender-crisp.
  5. Add the softened rice noodles to the skillet along with the coconut aminos, salt, and black pepper. Toss everything together until well combined and heated through, about 2-3 minutes.
  6. Remove from heat and garnish with chopped spring onions and fresh cilantro before serving.
