- Rice noodles - 200 grams
- Chicken breast - 200 grams, thinly sliced

- Spring onions - 2, chopped
- Carrot - 1 medium, julienned
- Bell pepper - 1 medium, julienned
- Cabbage - 100 grams, shredded
- Coconut aminos - 3 tablespoons
- Sesame oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- Soak the rice noodles in warm water for about 20 minutes or until softened, then drain and set aside.
- In a large skillet or wok, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
- Add the sliced chicken breast to the skillet and cook for 5-7 minutes until fully cooked and no longer pink.
- Stir in the julienned carrot, bell pepper, and shredded cabbage to the skillet, cooking for an additional 3-4 minutes until the vegetables are tender-crisp.
- Add the softened rice noodles to the skillet along with the coconut aminos, salt, and black pepper. Toss everything together until well combined and heated through, about 2-3 minutes.
- Remove from heat and garnish with chopped spring onions and fresh cilantro before serving.
