- Jasmine rice - 150 grams
- Fermented bamboo shoots - 50 grams, chopped
- Pickled mustard greens - 50 grams, chopped
- Dried chili peppers - 2 pieces, chopped
- Garlic - 2 cloves, minced
- Ginger - 1 inch, minced
- Spring onion - 2 stalks, chopped
- Vegetable oil - 2 tablespoons
- Soy sauce (gluten-free) - 1 tablespoon
- Rice vinegar - 1 tablespoon
- Water - 400 milliliters
- Salt - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak for 20 minutes.
- In a pot, heat the vegetable oil over medium heat. Add the minced garlic, ginger, and dried chili peppers, and sauté until fragrant.
- Drain the soaked rice and add it to the pot, stirring to coat the rice with the oil and spices.
- Pour in 400 milliliters of water and bring it to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the rice is tender and the water is absorbed.
- While the rice is cooking, prepare the toppings. In a separate bowl, mix the fermented bamboo shoots, pickled mustard greens, and soy sauce.
- Once the rice is cooked, fluff it with a fork and mix in the rice vinegar, salt, and half of the chopped spring onions.
- Serve the sour rice in bowls topped with the fermented mixture and garnish with the remaining spring onions.
