Ingredients

  • Jasmine rice - 150 grams
  • Fermented bamboo shoots - 50 grams, chopped
  • Pickled mustard greens - 50 grams, chopped
  • Dried chili peppers - 2 pieces, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch, minced
  • Spring onion - 2 stalks, chopped
  • Vegetable oil - 2 tablespoons
  • Soy sauce (gluten-free) - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Water - 400 milliliters
  • Salt - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak for 20 minutes.
  2. In a pot, heat the vegetable oil over medium heat. Add the minced garlic, ginger, and dried chili peppers, and sauté until fragrant.
  3. Drain the soaked rice and add it to the pot, stirring to coat the rice with the oil and spices.
  4. Pour in 400 milliliters of water and bring it to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the rice is tender and the water is absorbed.
  5. While the rice is cooking, prepare the toppings. In a separate bowl, mix the fermented bamboo shoots, pickled mustard greens, and soy sauce.
  6. Once the rice is cooked, fluff it with a fork and mix in the rice vinegar, salt, and half of the chopped spring onions.
  7. Serve the sour rice in bowls topped with the fermented mixture and garnish with the remaining spring onions.
