  • Cooked jasmine rice - 300 grams
  • Ground chicken - 200 grams
  • Egg - 1 large
  • Mozzarella cheese - 100 grams, shredded
  • Bell pepper - 1 medium, diced
  • Green onions - 2, chopped
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Black pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Olive oil - 2 tablespoons

Steps

  1. In a mixing bowl, combine the cooked jasmine rice, ground chicken, egg, mozzarella cheese, diced bell pepper, chopped green onions, soy sauce, sesame oil, minced garlic, black pepper, and salt. Mix well until all ingredients are evenly incorporated.
  2. Heat 1 tablespoon of olive oil in a non-stick frying pan over medium heat. Pour half of the rice mixture into the pan, spreading it evenly to form a pizza-like base.
  3. Cook for about 5-7 minutes, or until the bottom is golden brown and crispy. Carefully flip the rice pizza using a spatula and cook the other side for an additional 5 minutes.
  4. Remove the first rice pizza from the pan and repeat the process with the remaining mixture, adding another tablespoon of olive oil if necessary.
  5. Once both rice pizzas are cooked, slice and serve hot, garnished with additional green onions if desired.
