  • Rice flour - 200 grams
  • Water - 250 milliliters
  • Salt - 1/2 teaspoon
  • Egg - 1 large
  • Vegetable oil - 2 tablespoons
  • Green onions - 2, finely chopped
  • Red bell pepper - 1/2, diced
  • Mushrooms - 100 grams, sliced
  • Mozzarella cheese - 100 grams, shredded
  • Soy sauce - 1 tablespoon
  • Black pepper - 1/4 teaspoon
  • Fresh basil - a handful, chopped

Steps

  1. In a mixing bowl, combine the rice flour, water, salt, and egg. Whisk until you have a smooth batter.
  2. Heat a non-stick skillet over medium heat and add 1 tablespoon of vegetable oil.
  3. Pour half of the batter into the skillet, spreading it evenly to form a round base. Cook for 5-7 minutes until the bottom is golden brown.
  4. Carefully flip the base and cook for an additional 5 minutes on the other side. Remove from the skillet and set aside.
  5. Repeat the process with the remaining batter to create a second base.
  6. In the same skillet, add the remaining vegetable oil and sauté the green onions, red bell pepper, and mushrooms for about 3-4 minutes until softened.
  7. Add the soy sauce and black pepper to the sautéed vegetables, mixing well.
  8. Spread the vegetable mixture evenly over one of the rice flour bases, then sprinkle the shredded mozzarella cheese on top.
  9. Cover the skillet and cook for 4-5 minutes on low heat until the cheese is melted and bubbly.
  10. Remove from heat, garnish with fresh basil, and slice into wedges. Serve warm.
