- Water - 250 milliliters

- Egg - 1 large
- Vegetable oil - 2 tablespoons
- Green onions - 2, finely chopped
- Red bell pepper - 1/2, diced
- Mushrooms - 100 grams, sliced
- Mozzarella cheese - 100 grams, shredded
- Soy sauce - 1 tablespoon
- Black pepper - 1/4 teaspoon
- Fresh basil - a handful, chopped
Steps
- In a mixing bowl, combine the rice flour, water, salt, and egg. Whisk until you have a smooth batter.
- Heat a non-stick skillet over medium heat and add 1 tablespoon of vegetable oil.
- Pour half of the batter into the skillet, spreading it evenly to form a round base. Cook for 5-7 minutes until the bottom is golden brown.
- Carefully flip the base and cook for an additional 5 minutes on the other side. Remove from the skillet and set aside.
- Repeat the process with the remaining batter to create a second base.
- In the same skillet, add the remaining vegetable oil and sauté the green onions, red bell pepper, and mushrooms for about 3-4 minutes until softened.
- Add the soy sauce and black pepper to the sautéed vegetables, mixing well.
- Spread the vegetable mixture evenly over one of the rice flour bases, then sprinkle the shredded mozzarella cheese on top.
- Cover the skillet and cook for 4-5 minutes on low heat until the cheese is melted and bubbly.
- Remove from heat, garnish with fresh basil, and slice into wedges. Serve warm.
