Ingredients

  • Fresh edible snails - 300 grams
  • Garlic - 4 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Green onion - 2 stalks, chopped
  • Soy sauce - 2 tablespoons (gluten-free)
  • Chili oil - 1 tablespoon
  • Oyster sauce - 1 tablespoon
  • Brown sugar - 1 teaspoon
  • Sesame oil - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the snails in cold water to remove any debris, then soak them in clean water for about 1 hour to purge any grit.
  2. In a mixing bowl, combine minced garlic, minced ginger, chopped green onion, soy sauce, chili oil, oyster sauce, brown sugar, sesame oil, black pepper, salt, and lemon juice to create the marinade.
  3. Drain the snails and add them to the marinade, ensuring they are well coated. Cover and let marinate for at least 15 minutes.
  4. Preheat the grill to medium-high heat.
  5. Skewer the marinated snails onto skewers, ensuring to leave some space between each snail.
  6. Grill the skewered snails for about 5-7 minutes on each side, basting with leftover marinade until they are cooked through and slightly charred.
  7. Remove from the grill and serve hot, garnished with additional chopped green onions if desired.
