Ingredients

  • Brown rice - 150 grams
  • Water - 300 ml
  • Bamboo shoots (canned or fresh) - 100 grams, sliced
  • Mushrooms (shiitake or any preferred) - 50 grams, sliced
  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Coconut aminos - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Rinse the brown rice under cold water until the water runs clear, then soak it in water for at least 30 minutes.
  2. In a pan, heat olive oil over medium heat and sauté garlic and ginger until fragrant, about 1 minute.
  3. Add the diced carrot, bell pepper, bamboo shoots, and mushrooms to the pan, and cook for another 5-7 minutes until the vegetables are tender.
  4. After soaking, drain the rice and mix it with the sautéed vegetables, coconut aminos, salt, and black pepper.
  5. Prepare bamboo tubes by cleaning them thoroughly. If using fresh bamboo, cut them to about 30 cm in length.
  6. Fill each bamboo tube with the rice and vegetable mixture, leaving about 2.5 cm of space at the top for expansion.
  7. Seal the ends of the bamboo tubes with foil to prevent steaming out, if necessary.
  8. Place the bamboo tubes upright in a pot with a steamer basket or directly in a pot with water, ensuring water does not enter the tubes.
  9. Cover the pot and steam for about 30-35 minutes, or until the rice is fully cooked and fluffy.
  10. Remove the bamboo tubes from the pot, allow them to cool slightly, then carefully extract the rice using a chopstick or fork.
  11. Garnish with fresh cilantro and serve warm.
