Ingredients
- Brown rice - 150 grams
- Water - 300 ml
- Bamboo shoots (canned or fresh) - 100 grams, sliced
- Mushrooms (shiitake or any preferred) - 50 grams, sliced
- Carrot - 1 medium, diced
- Bell pepper - 1 medium, diced
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Coconut aminos - 2 tablespoons
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- Rinse the brown rice under cold water until the water runs clear, then soak it in water for at least 30 minutes.
- In a pan, heat olive oil over medium heat and sauté garlic and ginger until fragrant, about 1 minute.
- Add the diced carrot, bell pepper, bamboo shoots, and mushrooms to the pan, and cook for another 5-7 minutes until the vegetables are tender.
- After soaking, drain the rice and mix it with the sautéed vegetables, coconut aminos, salt, and black pepper.
- Prepare bamboo tubes by cleaning them thoroughly. If using fresh bamboo, cut them to about 30 cm in length.
- Fill each bamboo tube with the rice and vegetable mixture, leaving about 2.5 cm of space at the top for expansion.
- Seal the ends of the bamboo tubes with foil to prevent steaming out, if necessary.
- Place the bamboo tubes upright in a pot with a steamer basket or directly in a pot with water, ensuring water does not enter the tubes.
- Cover the pot and steam for about 30-35 minutes, or until the rice is fully cooked and fluffy.
- Remove the bamboo tubes from the pot, allow them to cool slightly, then carefully extract the rice using a chopstick or fork.
- Garnish with fresh cilantro and serve warm.
