- Goose - 1 kg, whole, cleaned
- Salt - 2 tsp
- Five-spice powder - 1 tsp
- Soy sauce (gluten-free) - 3 tbsp
- Shaoxing wine - 2 tbsp
- Honey - 2 tbsp
- Garlic - 3 cloves, minced
- Ginger - 1 inch, minced
- Green onions - 2, chopped
- Water - 500 ml
Steps
- Preheat your oven to 220°C (430°F).
- In a bowl, mix salt, five-spice powder, soy sauce, Shaoxing wine, honey, garlic, and ginger to create a marinade.
- Rub the marinade all over the goose, ensuring it is thoroughly coated, and place it in the refrigerator for at least 1 hour, preferably overnight.
- Remove the goose from the fridge and allow it to come to room temperature for about 30 minutes.
- Place the goose on a rack in a roasting pan, and pour water into the pan to keep the meat moist during cooking.
- Roast the goose in the preheated oven for 30 minutes to crisp the skin.
- Reduce the oven temperature to 180°C (350°F) and continue roasting for another 60 minutes, basting with the pan juices every 20 minutes.
- Once the internal temperature reaches 75°C (165°F), remove the goose from the oven and let it rest for 10 minutes before carving.
- Serve the sliced goose garnished with chopped green onions.
