Ingredients

  • Goose - 1 kg, whole, cleaned
  • Salt - 2 tsp
  • Five-spice powder - 1 tsp
  • Soy sauce (gluten-free) - 3 tbsp
  • Shaoxing wine - 2 tbsp
  • Honey - 2 tbsp
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch, minced
  • Green onions - 2, chopped
  • Water - 500 ml

Steps

  1. Preheat your oven to 220°C (430°F).
  2. In a bowl, mix salt, five-spice powder, soy sauce, Shaoxing wine, honey, garlic, and ginger to create a marinade.
  3. Rub the marinade all over the goose, ensuring it is thoroughly coated, and place it in the refrigerator for at least 1 hour, preferably overnight.
  4. Remove the goose from the fridge and allow it to come to room temperature for about 30 minutes.
  5. Place the goose on a rack in a roasting pan, and pour water into the pan to keep the meat moist during cooking.
  6. Roast the goose in the preheated oven for 30 minutes to crisp the skin.
  7. Reduce the oven temperature to 180°C (350°F) and continue roasting for another 60 minutes, basting with the pan juices every 20 minutes.
  8. Once the internal temperature reaches 75°C (165°F), remove the goose from the oven and let it rest for 10 minutes before carving.
  9. Serve the sliced goose garnished with chopped green onions.
