Ingredients

  • Jasmine rice - 150g
  • Chicken broth - 300ml
  • Chinese sausage (lap Cheong) - 50g, sliced
  • Shiitake mushrooms - 50g, diced
  • Eggs - 2 large
  • Green onions - 2, finely chopped
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a pot, combine the soaked rice with chicken broth and bring to a boil over medium heat. Once boiling, reduce heat to low and cover, cooking for 15 minutes until the rice absorbs the broth.
  3. While the rice is cooking, heat a pan over medium heat and add the sliced Chinese sausage. Cook for 3-4 minutes until slightly crispy, then add the diced shiitake mushrooms and cook for another 2-3 minutes until softened.
  4. In a bowl, beat the eggs and mix in the soy sauce, sesame oil, salt, and pepper.
  5. Once the rice is cooked, remove it from heat and fluff with a fork. Stir in the sausage and mushroom mixture along with the chopped green onions.
  6. Create a well in the center of the rice mixture and pour in the beaten egg mixture. Cover the pot and let it sit for 5 minutes to allow the residual heat to cook the eggs gently.
  7. After 5 minutes, gently stir the rice pudding to incorporate the egg, then serve warm.
