- Jasmine rice - 150g
- Chicken broth - 300ml
- Chinese sausage (lap Cheong) - 50g, sliced
- Shiitake mushrooms - 50g, diced
- Eggs - 2 large
- Green onions - 2, finely chopped
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - to taste
- Pepper - to taste
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a pot, combine the soaked rice with chicken broth and bring to a boil over medium heat. Once boiling, reduce heat to low and cover, cooking for 15 minutes until the rice absorbs the broth.
- While the rice is cooking, heat a pan over medium heat and add the sliced Chinese sausage. Cook for 3-4 minutes until slightly crispy, then add the diced shiitake mushrooms and cook for another 2-3 minutes until softened.
- In a bowl, beat the eggs and mix in the soy sauce, sesame oil, salt, and pepper.
- Once the rice is cooked, remove it from heat and fluff with a fork. Stir in the sausage and mushroom mixture along with the chopped green onions.
- Create a well in the center of the rice mixture and pour in the beaten egg mixture. Cover the pot and let it sit for 5 minutes to allow the residual heat to cook the eggs gently.
- After 5 minutes, gently stir the rice pudding to incorporate the egg, then serve warm.
