Ingredients
- Jasmine rice - 150 grams
- Dried goji berries - 30 grams
- Dried apricots - 30 grams
- Walnuts - 30 grams, chopped
- Black sesame seeds - 20 grams
- Mushrooms (shiitake or wood ear) - 30 grams, rehydrated and sliced
- Carrot - 50 grams, diced
- Chicken breast - 150 grams, diced
- Coconut aminos - 2 tablespoons
- Ginger - 1 teaspoon, minced
- Garlic - 1 teaspoon, minced
- Water - 300 milliliters
Steps
- Rinse the Jasmine rice under cold water until the water runs clear, then soak it for 30 minutes.
- In a large pot, bring 300 milliliters of water to a boil. Add the soaked rice and reduce to a simmer. Cover and cook for 15 minutes until the rice is tender and water is absorbed.
- While the rice cooks, heat a non-stick skillet over medium heat. Add the chopped walnuts and toast for 2-3 minutes until fragrant, then remove and set aside.
- In the same skillet, add a little oil, then sauté the minced ginger and garlic until aromatic, about 1 minute.
- Add the diced chicken breast to the skillet and cook until browned and cooked through, about 5-7 minutes. Stir in the diced carrot and sliced mushrooms, cooking for an additional 3-4 minutes.
- Stir in the coconut aminos, goji berries, and diced dried apricots. Mix well and cook for another 2 minutes.
- Once the rice is cooked, fluff it with a fork and gently fold in the chicken mixture and toasted walnuts.
- Serve the Eight Treasures Rice warm, garnished with black sesame seeds.
