- Jasmine rice - 100g
- Water - 1 liter

- Chicken broth - 500ml
- Ginger - 10g, sliced
- Spring onions - 2, finely chopped
- Sesame oil - 1 tablespoon
- Soy sauce (gluten-free) - 1 tablespoon
- Coriander leaves - a handful, for garnish
- Cooked chicken breast - 100g, shredded
- Century egg (or regular boiled egg) - 1, sliced
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain.
- In a large pot, combine the rinsed rice and 1 liter of water. Bring to a boil over medium heat.
- Once boiling, reduce the heat to low and add the sliced ginger and salt. Stir occasionally to prevent sticking.
- Simmer the rice for about 30 minutes, or until it reaches a creamy consistency. Stir in the chicken broth during the last 10 minutes of cooking.
- In a small pan, heat the sesame oil over low heat. Add the chopped spring onions and sauté for 1-2 minutes until fragrant.
- Once the congee is ready, remove it from the heat and serve in bowls.
- Top each bowl with shredded cooked chicken, sliced century egg, sautéed spring onions, and fresh coriander leaves. Drizzle with gluten-free soy sauce before serving.
