- Spring onions - 2, chopped
- Coriander leaves - 2 tablespoons, chopped

- Salt - 1 teaspoon

- Charcoal - for grilling
Steps
- Clean the fish thoroughly, removing any scales and internal organs. Pat dry with paper towels.
- In a bowl, combine soy sauce, Shaoxing wine, sesame oil, minced garlic, minced ginger, chili flakes, salt, and black pepper. Mix well to create a marinade.
- Rub the marinade all over the fish, including inside the cavity. Ensure the fish is well coated. Let it marinate for at least 30 minutes.
- Prepare the charcoal grill by lighting the charcoal and allowing it to burn until covered with white ash, indicating it is ready for cooking.
- Place the marinated fish on a grill rack and grill for about 10-12 minutes on each side, or until the flesh is opaque and flakes easily with a fork.
- During the last few minutes of grilling, sprinkle chopped spring onions and coriander on top of the fish for added flavor.
- Once cooked, carefully remove the fish from the grill and serve immediately with additional spring onions and coriander as garnish.
