Ingredients

  • All-purpose flour - 200 grams
  • Water - 100 ml
  • Salt - 1/2 teaspoon
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 2 tablespoons
  • Vegetable broth - 150 ml
  • Scallions - 2, chopped
  • Broccoli - 100 grams, cut into small florets
  • Carrot - 1 medium, julienned
  • Red bell pepper - 1/2, sliced
  • Cilantro - a handful, for garnish

Steps

  1. In a mixing bowl, combine the all-purpose flour and salt, then gradually add the water while mixing until a dough forms.
  2. Knead the dough on a floured surface for about 5-7 minutes until smooth, then cover with a damp cloth and let it rest for 20 minutes.
  3. While the dough is resting, prepare the vegetables: steam the broccoli florets until tender, about 4-5 minutes, and set aside.
  4. In a pan, heat the sesame oil over medium heat. Add minced garlic and grated ginger, sautéing until fragrant, about 1 minute.
  5. Add the sliced red bell pepper and julienned carrot to the pan, cooking for 3-4 minutes until slightly softened.
  6. Stir in the soy sauce and vegetable broth, bringing to a gentle simmer. Add the steamed broccoli and chopped scallions, mixing well.
  7. Divide the rested dough into two portions and roll each into a long rope, then stretch and pull to create thin noodles.
  8. Boil a pot of water, then cook the hand-pulled noodles for 3-4 minutes until al dente. Drain and rinse under cold water.
  9. Add the cooked noodles to the pan with the sauce and vegetables, tossing to combine everything well.
  10. Serve hot, garnished with fresh cilantro.
