Ingredients

  • All-purpose flour - 200 grams
  • Active dry yeast - 5 grams
  • Sugar - 10 grams
  • Warm water - 120 ml
  • Salt - 2 grams
  • Cooking oil - 10 ml
  • Boneless chicken thighs - 300 grams
  • Soy sauce - 30 ml
  • Oyster sauce - 15 ml
  • Five spice powder - 5 grams
  • Ginger, minced - 5 grams
  • Garlic, minced - 5 grams
  • Cucumber, julienned - 50 grams
  • Fresh cilantro - 20 grams
  • Peanut powder - 10 grams

Steps

  1. In a bowl, mix warm water, sugar, and yeast. Let it sit for 5-10 minutes until foamy.
  2. In another bowl, combine flour and salt. Make a well in the center and add the yeast mixture and oil. Mix until a dough forms.
  3. Knead the dough on a lightly floured surface for 10 minutes until smooth. Place it in a greased bowl, cover with a damp cloth, and let it rise for 1 hour or until doubled in size.
  4. While the dough is rising, prepare the chicken. In a bowl, mix soy sauce, oyster sauce, five spice powder, ginger, and garlic. Add chicken thighs, coat well, and marinate for at least 30 minutes.
  5. In a pan over medium heat, cook the marinated chicken for 15-20 minutes until fully cooked and tender. Remove from heat and let it rest before slicing.
  6. Once the dough has risen, punch it down and divide it into 4 equal pieces. Shape each piece into an oval and place on parchment paper. Cover and let rise for another 20 minutes.
  7. Steam the buns in a steamer for 10-12 minutes until fluffy and cooked through.
  8. To assemble, slice each bun open, add a portion of sliced chicken, top with cucumber, cilantro, and a sprinkle of peanut powder.
  9. Serve warm and enjoy your delicious Gua Bao!
