  • Mushrooms (shiitake or button) - 150g
  • Carrot - 1 medium (about 100g)
  • Eggplant - 1 small (about 150g)
  • Spring onions - 2 stalks
  • Garlic - 3 cloves, minced
  • Soy sauce - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Honey or maple syrup - 1 teaspoon
  • Black pepper - to taste
  • Salt - to taste
  • Cooking oil - for grilling

Steps

  1. Preheat the grill or grill pan over medium heat.
  2. Wash and slice the zucchini, bell pepper, mushrooms, carrot, and eggplant into even pieces.
  3. In a bowl, mix together the minced garlic, soy sauce, sesame oil, rice vinegar, honey (or maple syrup), black pepper, and salt to create the marinade.
  4. Add the sliced vegetables to the marinade, ensuring they are well coated. Let them marinate for at least 10 minutes.
  5. Skewer the marinated vegetables onto metal or soaked wooden skewers, alternating between different types for a colorful presentation.
  6. Brush the grill with a bit of cooking oil to prevent sticking.
  7. Place the skewers on the grill and cook for 8-10 minutes, turning occasionally until the vegetables are tender and have grill marks.
  8. In the last 2 minutes of grilling, add the spring onions to the grill for a quick char.
  9. Remove the skewers from the grill, let them cool slightly, and serve warm.
