Ingredients

  • All-purpose flour - 150 grams
  • Boiling water - 100 milliliters
  • Salt - 1/2 teaspoon
  • Vegetable oil - 2 tablespoons
  • Scallions - 100 grams, finely chopped
  • Sesame oil - 1 tablespoon
  • Black pepper - 1/4 teaspoon

Steps

  1. In a mixing bowl, combine the all-purpose flour and salt.
  2. Gradually add the boiling water to the flour, stirring with chopsticks or a fork until a shaggy dough forms.
  3. Once cool enough to handle, knead the dough on a floured surface for about 5 minutes until smooth. Cover and let it rest for 15 minutes.
  4. While the dough is resting, prepare the filling by mixing the chopped scallions, sesame oil, and black pepper in a small bowl.
  5. Divide the rested dough into two equal portions. Roll out each portion into a thin circle (about 20 cm in diameter) on a floured surface.
  6. Spread 1 tablespoon of vegetable oil evenly over each circle, then sprinkle half of the scallion mixture on top.
  7. Starting from one edge, roll the dough tightly into a log. Then coil the log into a spiral shape and flatten it gently into a disk.
  8. Heat a grill or grill pan over medium-high heat. Brush with a little vegetable oil.
  9. Cook each pancake for about 4-5 minutes on each side, or until golden brown and crispy.
  10. Remove from the grill and slice into wedges. Serve hot with soy sauce or your favorite dipping sauce.
