- Boiling water - 100 milliliters

- Vegetable oil - 2 tablespoons
- Scallions - 100 grams, finely chopped
- Sesame oil - 1 tablespoon
- Black pepper - 1/4 teaspoon
Steps
- In a mixing bowl, combine the all-purpose flour and salt.
- Gradually add the boiling water to the flour, stirring with chopsticks or a fork until a shaggy dough forms.
- Once cool enough to handle, knead the dough on a floured surface for about 5 minutes until smooth. Cover and let it rest for 15 minutes.
- While the dough is resting, prepare the filling by mixing the chopped scallions, sesame oil, and black pepper in a small bowl.
- Divide the rested dough into two equal portions. Roll out each portion into a thin circle (about 20 cm in diameter) on a floured surface.
- Spread 1 tablespoon of vegetable oil evenly over each circle, then sprinkle half of the scallion mixture on top.
- Starting from one edge, roll the dough tightly into a log. Then coil the log into a spiral shape and flatten it gently into a disk.
- Heat a grill or grill pan over medium-high heat. Brush with a little vegetable oil.
- Cook each pancake for about 4-5 minutes on each side, or until golden brown and crispy.
- Remove from the grill and slice into wedges. Serve hot with soy sauce or your favorite dipping sauce.
