Ingredients

  • Fresh pineapple - 300 grams, peeled and cut into 2.5 cm cubes
  • Red bell pepper - 1 medium, cut into 2.5 cm pieces
  • Green bell pepper - 1 medium, cut into 2.5 cm pieces
  • Red onion - 1 small, cut into 2.5 cm pieces
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Honey or maple syrup - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ground ginger - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Skewers - 4 (if wooden, soaked in water for 30 minutes)

Steps

  1. In a bowl, mix together soy sauce, sesame oil, honey (or maple syrup), minced garlic, ground ginger, and black pepper to create a marinade.
  2. Add the pineapple cubes, red bell pepper, green bell pepper, and red onion to the marinade. Toss well to coat all the pieces and let it marinate for 15 minutes.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated pineapple and vegetables onto the skewers, alternating between the pineapple and the peppers and onion.
  5. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the vegetables are tender and the pineapple has nice grill marks.
  6. Remove from grill and serve hot, optionally garnished with sesame seeds or fresh herbs.
