- Fresh pineapple - 300 grams, peeled and cut into 2.5 cm cubes
- Red bell pepper - 1 medium, cut into 2.5 cm pieces
- Green bell pepper - 1 medium, cut into 2.5 cm pieces
- Red onion - 1 small, cut into 2.5 cm pieces
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Honey or maple syrup - 1 tablespoon
- Garlic - 2 cloves, minced
- Ground ginger - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Skewers - 4 (if wooden, soaked in water for 30 minutes)
Steps
- In a bowl, mix together soy sauce, sesame oil, honey (or maple syrup), minced garlic, ground ginger, and black pepper to create a marinade.
- Add the pineapple cubes, red bell pepper, green bell pepper, and red onion to the marinade. Toss well to coat all the pieces and let it marinate for 15 minutes.
- Preheat the grill to medium-high heat.
- Thread the marinated pineapple and vegetables onto the skewers, alternating between the pineapple and the peppers and onion.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the vegetables are tender and the pineapple has nice grill marks.
- Remove from grill and serve hot, optionally garnished with sesame seeds or fresh herbs.
