  • White fish fillets (e.g., cod or tilapia) - 300 grams
  • Garlic - 2 cloves, minced

  • Coconut aminos - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Honey - 1 teaspoon
  • Lime juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Green onions - 2, chopped
  • Red bell pepper - 1, cut into squares
  • Zucchini - 1 small, cut into rounds
  • Skewers (soaked in water if wooden) - 4

Steps

  1. Cut the fish fillets into 2.5 cm cubes and place them in a bowl.
  2. In a separate bowl, mix the minced garlic, grated ginger, coconut aminos, sesame oil, honey, lime juice, salt, and black pepper to create the marinade.
  3. Pour the marinade over the fish cubes and toss to coat. Let it marinate for at least 15 minutes.
  4. While the fish is marinating, prepare the vegetables by cutting the red bell pepper into squares and the zucchini into rounds.
  5. Preheat the grill to medium-high heat.
  6. Thread the marinated fish cubes, red bell pepper squares, zucchini rounds, and chopped green onions onto the skewers, alternating between fish and vegetables.
  7. Once the grill is hot, place the skewers on the grill and cook for 10-12 minutes, turning occasionally until the fish is cooked through and flakes easily with a fork.
  8. Remove from the grill and serve immediately with additional lime wedges if desired.
