Ingredients

  • Beef tongue - 500 grams
  • Soy sauce - 2 tablespoons
  • Shaoxing wine - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Sugar - 1 teaspoon
  • Sesame oil - 1 tablespoon
  • Black pepper - 1 teaspoon
  • Chili flakes - 1/2 teaspoon
  • Spring onions - 2, chopped (for garnish)

Steps

  1. Start by cleaning the beef tongue under cold water, removing any excess fat and skin.
  2. In a large pot, add the tongue and cover it with water. Bring to a boil and simmer for about 2 hours until tender.
  3. Once cooked, remove the tongue from the pot, let it cool slightly, and peel off the outer skin.
  4. In a bowl, mix together soy sauce, Shaoxing wine, minced garlic, grated ginger, sugar, sesame oil, black pepper, and chili flakes to create the marinade.
  5. Slice the cooked tongue into 1 cm thick pieces and add them to the marinade, ensuring all slices are well coated. Let it marinate for at least 30 minutes.
  6. Preheat the grill to medium-high heat and lightly oil the grates.
  7. Grill the marinated tongue slices for about 3-4 minutes on each side until they have nice grill marks and are heated through.
  8. Remove from the grill and let rest for a couple of minutes before serving. Garnish with chopped spring onions.
