- Beef tongue - 500 grams
- Soy sauce - 2 tablespoons
- Shaoxing wine - 2 tablespoons
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, grated
- Sugar - 1 teaspoon
- Sesame oil - 1 tablespoon
- Black pepper - 1 teaspoon
- Chili flakes - 1/2 teaspoon
- Spring onions - 2, chopped (for garnish)
Steps
- Start by cleaning the beef tongue under cold water, removing any excess fat and skin.
- In a large pot, add the tongue and cover it with water. Bring to a boil and simmer for about 2 hours until tender.
- Once cooked, remove the tongue from the pot, let it cool slightly, and peel off the outer skin.
- In a bowl, mix together soy sauce, Shaoxing wine, minced garlic, grated ginger, sugar, sesame oil, black pepper, and chili flakes to create the marinade.
- Slice the cooked tongue into 1 cm thick pieces and add them to the marinade, ensuring all slices are well coated. Let it marinate for at least 30 minutes.
- Preheat the grill to medium-high heat and lightly oil the grates.
- Grill the marinated tongue slices for about 3-4 minutes on each side until they have nice grill marks and are heated through.
- Remove from the grill and let rest for a couple of minutes before serving. Garnish with chopped spring onions.
