- Shrimp - 250 grams, peeled and deveined
- Peanuts - 50 grams, roasted and unsalted
- Dried red chilies - 5, seeds removed
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, minced
- Green onions - 2 stalks, chopped (white and green parts separated)
- Bell pepper - 1, diced
- Soy sauce (gluten-free) - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Sugar - 1 teaspoon
- Cornstarch - 1 teaspoon
- Sesame oil - 1 tablespoon
- Cooking oil - 2 tablespoons
Steps
- In a small bowl, mix the soy sauce, rice vinegar, sugar, and cornstarch to create the sauce mixture. Set aside.
- Heat 1 tablespoon of cooking oil in a pan or wok over medium-high heat. Add the dried red chilies and stir-fry for 30 seconds until fragrant.
- Add the minced garlic and ginger to the pan, stirring for another 30 seconds until aromatic.
- Increase the heat to high and add the shrimp to the pan. Stir-fry for about 3-4 minutes until the shrimp turns pink and is cooked through.
- Add the diced bell pepper and the white parts of the green onions to the pan. Stir-fry for an additional 2 minutes until the vegetables are slightly tender.
- Pour the sauce mixture over the shrimp and vegetables, stirring continuously for 1-2 minutes until the sauce thickens and coats the ingredients.
- Add the roasted peanuts and the green parts of the green onions, giving everything a good mix. Stir-fry for another minute.
- Drizzle with sesame oil before serving.
