Ingredients

  • Shrimp (peeled and deveined) - 300 grams
  • Peanuts (unsalted) - 50 grams
  • Bell pepper (diced) - 1 medium
  • Green onions (chopped) - 4 stalks
  • Garlic (minced) - 3 cloves
  • Ginger (minced) - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Szechuan peppercorns - 1 teaspoon
  • Chili paste - 1 tablespoon
  • Cornstarch - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Water - 100 milliliters

Steps

  1. In a bowl, combine the shrimp with cornstarch, 1 tablespoon of soy sauce, and a pinch of salt. Let it marinate for about 10 minutes.
  2. Heat 1 tablespoon of vegetable oil in a wok over medium-high heat. Add the marinated shrimp and stir-fry until they turn pink and are cooked through, about 3-4 minutes. Remove the shrimp from the wok and set aside.
  3. In the same wok, add the remaining tablespoon of oil. Stir-fry the minced garlic, ginger, and Szechuan peppercorns for about 30 seconds until fragrant.
  4. Add the diced bell pepper and continue to stir-fry for another 2 minutes until they begin to soften.
  5. Return the cooked shrimp to the wok, add the peanuts, remaining soy sauce, rice vinegar, chili paste, and water. Stir well to coat everything evenly.
  6. Cook for an additional 2-3 minutes until the sauce has thickened slightly.
  7. Stir in the chopped green onions just before serving, and remove from heat.
