Ingredients
- Shrimp (peeled and deveined) - 300 grams
- Peanuts (unsalted) - 50 grams
- Bell pepper (diced) - 1 medium
- Green onions (chopped) - 4 stalks
- Garlic (minced) - 3 cloves
- Ginger (minced) - 1 tablespoon
- Soy sauce - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Szechuan peppercorns - 1 teaspoon
- Chili paste - 1 tablespoon
- Cornstarch - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Water - 100 milliliters
Steps
- In a bowl, combine the shrimp with cornstarch, 1 tablespoon of soy sauce, and a pinch of salt. Let it marinate for about 10 minutes.
- Heat 1 tablespoon of vegetable oil in a wok over medium-high heat. Add the marinated shrimp and stir-fry until they turn pink and are cooked through, about 3-4 minutes. Remove the shrimp from the wok and set aside.
- In the same wok, add the remaining tablespoon of oil. Stir-fry the minced garlic, ginger, and Szechuan peppercorns for about 30 seconds until fragrant.
- Add the diced bell pepper and continue to stir-fry for another 2 minutes until they begin to soften.
- Return the cooked shrimp to the wok, add the peanuts, remaining soy sauce, rice vinegar, chili paste, and water. Stir well to coat everything evenly.
- Cook for an additional 2-3 minutes until the sauce has thickened slightly.
- Stir in the chopped green onions just before serving, and remove from heat.
