Ingredients

  • Chicken breast - 300 grams, diced
  • Peanuts - 50 grams, roasted
  • Bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Spring onions - 2, chopped
  • Soy sauce - 2 tablespoons
  • Chinese rice vinegar - 1 tablespoon
  • Chili paste - 1 teaspoon (adjust to taste)
  • Sesame oil - 1 teaspoon
  • Cornstarch - 1 tablespoon
  • Water - 50 ml
  • Cooking oil - 2 tablespoons
  • Salt - to taste

Steps

  1. In a bowl, mix the diced chicken with cornstarch, a pinch of salt, and 1 tablespoon of soy sauce. Let it marinate for 15 minutes.
  2. Heat 1 tablespoon of cooking oil in a non-stick pan or wok over medium-high heat. Add the marinated chicken and stir-fry until golden brown and cooked through, about 5-7 minutes. Remove the chicken and set aside.
  3. In the same pan, add the remaining tablespoon of oil. Stir-fry the minced garlic, ginger, and spring onions for about 1 minute until fragrant.
  4. Add the diced bell pepper and zucchini to the pan, stir-frying for another 3-4 minutes until they are tender but still crisp.
  5. Return the cooked chicken to the pan. Add the chili paste, remaining soy sauce, rice vinegar, and water. Stir well to combine all the ingredients.
  6. Finally, add the roasted peanuts and sesame oil. Stir-fry everything together for an additional 2 minutes until heated through.
  7. Serve hot with steamed rice or noodles.
