Ingredients
- Chicken breast - 300 grams, diced
- Peanuts - 50 grams, roasted
- Bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, minced
- Spring onions - 2, chopped
- Soy sauce - 2 tablespoons
- Chinese rice vinegar - 1 tablespoon
- Chili paste - 1 teaspoon (adjust to taste)
- Sesame oil - 1 teaspoon
- Cornstarch - 1 tablespoon
- Water - 50 ml
- Cooking oil - 2 tablespoons
- Salt - to taste
Steps
- In a bowl, mix the diced chicken with cornstarch, a pinch of salt, and 1 tablespoon of soy sauce. Let it marinate for 15 minutes.
- Heat 1 tablespoon of cooking oil in a non-stick pan or wok over medium-high heat. Add the marinated chicken and stir-fry until golden brown and cooked through, about 5-7 minutes. Remove the chicken and set aside.
- In the same pan, add the remaining tablespoon of oil. Stir-fry the minced garlic, ginger, and spring onions for about 1 minute until fragrant.
- Add the diced bell pepper and zucchini to the pan, stir-frying for another 3-4 minutes until they are tender but still crisp.
- Return the cooked chicken to the pan. Add the chili paste, remaining soy sauce, rice vinegar, and water. Stir well to combine all the ingredients.
- Finally, add the roasted peanuts and sesame oil. Stir-fry everything together for an additional 2 minutes until heated through.
- Serve hot with steamed rice or noodles.
