- Chicken breast - 250 grams, diced
- Peanuts - 50 grams, roasted and unsalted
- Bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Spring onions - 2, chopped
- Soy sauce - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Szechuan peppercorns - 1 teaspoon, crushed
- Chili flakes - 1 teaspoon (adjust to taste)
- Cornstarch - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Water - 100 ml
- Salt - to taste
Steps
- Marinate the diced chicken with 1 tablespoon of soy sauce, cornstarch, and a pinch of salt for 15 minutes.
- In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.
- Add the marinated chicken and stir-fry until cooked through and slightly browned, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of oil, then add minced garlic, ginger, Szechuan peppercorns, and chili flakes. Stir-fry for 30 seconds until fragrant.
- Add the diced bell pepper and zucchini to the skillet, cooking for 3-4 minutes until they start to soften.
- Return the cooked chicken to the skillet. Add the remaining soy sauce, rice vinegar, and water. Stir well to combine.
- Add the roasted peanuts and chopped spring onions, stir-frying everything for an additional 2-3 minutes until heated through.
- Taste and adjust seasoning with salt if necessary. Serve hot with steamed rice.
