Ingredients

  • Chicken breast - 250 grams, diced
  • Peanuts - 50 grams, roasted and unsalted
  • Bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Spring onions - 2, chopped
  • Soy sauce - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Szechuan peppercorns - 1 teaspoon, crushed
  • Chili flakes - 1 teaspoon (adjust to taste)
  • Cornstarch - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Water - 100 ml
  • Salt - to taste

Steps

  1. Marinate the diced chicken with 1 tablespoon of soy sauce, cornstarch, and a pinch of salt for 15 minutes.
  2. In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.
  3. Add the marinated chicken and stir-fry until cooked through and slightly browned, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the remaining tablespoon of oil, then add minced garlic, ginger, Szechuan peppercorns, and chili flakes. Stir-fry for 30 seconds until fragrant.
  5. Add the diced bell pepper and zucchini to the skillet, cooking for 3-4 minutes until they start to soften.
  6. Return the cooked chicken to the skillet. Add the remaining soy sauce, rice vinegar, and water. Stir well to combine.
  7. Add the roasted peanuts and chopped spring onions, stir-frying everything for an additional 2-3 minutes until heated through.
  8. Taste and adjust seasoning with salt if necessary. Serve hot with steamed rice.
