Ingredients

  • Duck breast - 2 pieces (200g each)
  • Soy sauce (gluten-free) - 2 tablespoons
  • Shaoxing wine - 1 tablespoon
  • Hoisin sauce - 1 tablespoon
  • Five-spice powder - 1 teaspoon
  • Fresh ginger - 1 inch, grated
  • Garlic - 2 cloves, minced
  • Black tea leaves - 2 tablespoons
  • Uncooked rice - 2 tablespoons
  • Brown sugar - 1 tablespoon
  • Water - 50ml
  • Salt - to taste
  • Green onions - for garnish

Steps

  1. In a bowl, combine soy sauce, Shaoxing wine, hoisin sauce, five-spice powder, grated ginger, minced garlic, and salt. Mix well to create a marinade.
  2. Score the skin of the duck breasts in a crosshatch pattern. Place the duck in the marinade, cover, and refrigerate for at least 30 minutes.
  3. Remove the duck from the marinade and pat dry with paper towels. Reserve the marinade for later.
  4. In a small pan, combine black tea leaves, uncooked rice, and brown sugar to create the smoking mixture.
  5. Place a rack over a deep pan and add the smoking mixture to the bottom. Heat the pan over medium heat until the mixture begins to smoke.
  6. Once the smoke appears, place the duck breasts skin side up on the rack, cover the pan tightly with a lid or aluminum foil, and reduce the heat to low. Smoke for 15-20 minutes.
  7. After smoking, remove the duck from the pan and preheat the oven to 200°C (400°F).
  8. Place the duck breasts on a baking tray and brush with the reserved marinade. Roast in the oven for 15-20 minutes or until the internal temperature reaches 75°C (165°F).
  9. Remove the duck from the oven and let it rest for 5 minutes before slicing.
  10. Serve the smoked duck garnished with chopped green onions.
