  • Soy sauce (gluten-free) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Scallions - 2, chopped
  • Bell pepper - 1/2, thinly sliced
  • Carrot - 1 small, julienned
  • Cilantro - a handful, chopped
  • Salt - to taste

Steps

  1. Bring a pot of water to a boil and cook the gluten-free rice noodles according to the package instructions. Drain and set aside.
  2. In a large skillet, heat the vegetable oil over medium heat. Add the Szechuan peppercorns and stir-fry for about 30 seconds until fragrant.
  3. Add the minced garlic and ginger to the skillet and sauté for another minute until golden.
  4. Stir in the red chili paste, soy sauce, and sesame oil, mixing well to create a sauce.
  5. Add the sliced bell pepper and julienned carrot to the skillet, cooking for 2-3 minutes until slightly softened.
  6. Add the cooked rice noodles to the skillet, tossing to combine everything evenly with the sauce.
