- Soy sauce (gluten-free) - 1 tablespoon
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Cornstarch - 1 tablespoon
- Water - 2 tablespoons
Steps
- Heat the olive oil in a saucepan over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
- Add the sweet corn to the saucepan and stir for 2-3 minutes, allowing the corn to lightly toast.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for 10 minutes.
- Use an immersion blender to puree the soup until smooth. If you don’t have one, carefully transfer the soup to a blender in batches and blend until creamy.
- Stir in the coconut milk, soy sauce, and season with salt and black pepper. Let it simmer for another 5 minutes.
- In a small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry. Stir this into the soup to thicken it, and cook for an additional 2-3 minutes.
