  • Soy sauce (gluten-free) - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Cornstarch - 1 tablespoon
  • Water - 2 tablespoons

Steps

  1. Heat the olive oil in a saucepan over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
  2. Add the sweet corn to the saucepan and stir for 2-3 minutes, allowing the corn to lightly toast.
  3. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for 10 minutes.

  6. In a small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry. Stir this into the soup to thicken it, and cook for an additional 2-3 minutes.
