Ingredients
- Firm tofu - 300 grams
- Cornstarch - 3 tablespoons
- Vegetable oil - 4 tablespoons
- Red bell pepper - 1 medium, diced
- Green bell pepper - 1 medium, diced
- Pineapple chunks - 100 grams, canned or fresh
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Soy sauce (gluten-free) - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Honey or maple syrup - 2 tablespoons
- Ketchup - 2 tablespoons
- Water - 100 ml
- Sesame seeds - 1 tablespoon (for garnish)
- Green onions - 2, chopped (for garnish)
Steps
- Press the tofu for about 15 minutes to remove excess moisture, then cut it into cubes.
- In a bowl, toss the tofu cubes with cornstarch until evenly coated.
- Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Add the tofu cubes and fry until golden and crispy on all sides, about 8-10 minutes. Remove and set aside.
- In the same skillet, add the remaining 2 tablespoons of vegetable oil. Sauté the minced garlic and ginger for about 1 minute until fragrant.
- Add the diced red and green bell peppers to the skillet and stir-fry for about 3-4 minutes until they start to soften.
- In a bowl, mix together the soy sauce, rice vinegar, honey or maple syrup, ketchup, and water. Pour this sauce into the skillet with the bell peppers.
- Add the pineapple chunks and cooked tofu to the skillet. Stir well to combine all ingredients and cook for an additional 5 minutes until heated through and the sauce thickens slightly.
- Serve hot, garnished with sesame seeds and chopped green onions.
