Ingredients

  • Firm tofu - 300 grams
  • Cornstarch - 3 tablespoons
  • Vegetable oil - 4 tablespoons
  • Red bell pepper - 1 medium, diced
  • Green bell pepper - 1 medium, diced
  • Pineapple chunks - 100 grams, canned or fresh
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Soy sauce (gluten-free) - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Honey or maple syrup - 2 tablespoons
  • Ketchup - 2 tablespoons
  • Water - 100 ml
  • Sesame seeds - 1 tablespoon (for garnish)
  • Green onions - 2, chopped (for garnish)

Steps

  1. Press the tofu for about 15 minutes to remove excess moisture, then cut it into cubes.
  2. In a bowl, toss the tofu cubes with cornstarch until evenly coated.
  3. Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Add the tofu cubes and fry until golden and crispy on all sides, about 8-10 minutes. Remove and set aside.
  4. In the same skillet, add the remaining 2 tablespoons of vegetable oil. Sauté the minced garlic and ginger for about 1 minute until fragrant.
  5. Add the diced red and green bell peppers to the skillet and stir-fry for about 3-4 minutes until they start to soften.
  6. In a bowl, mix together the soy sauce, rice vinegar, honey or maple syrup, ketchup, and water. Pour this sauce into the skillet with the bell peppers.
  7. Add the pineapple chunks and cooked tofu to the skillet. Stir well to combine all ingredients and cook for an additional 5 minutes until heated through and the sauce thickens slightly.
  8. Serve hot, garnished with sesame seeds and chopped green onions.
