Ingredients

  • Pork chops - 2 pieces (about 150g each)
  • Gluten-free soy sauce - 2 tablespoons
  • Honey - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Ketchup - 2 tablespoons
  • Cornstarch - 1 tablespoon
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated
  • Bell pepper - 1/2, sliced
  • Pineapple chunks - 100g, canned or fresh
  • Green onions - 2, sliced (for garnish)
  • Vegetable oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a small bowl, mix gluten-free soy sauce, honey, rice vinegar, ketchup, minced garlic, and grated ginger to create the sweet and sour sauce.
  2. Pat the pork chops dry with a paper towel and season both sides with salt and pepper.
  3. In a large skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Add the pork chops and sear for about 4-5 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
  4. In the same skillet, add the remaining tablespoon of oil and sauté the sliced bell pepper for 2-3 minutes until soft.
  5. Add the pineapple chunks and the sweet and sour sauce to the skillet, stirring well to combine. Let it simmer for 3-4 minutes until slightly thickened.
  6. Return the pork chops to the skillet, coating them with the sauce. Cook for an additional 2 minutes to heat through.
  7. Serve the pork chops drizzled with sauce and garnish with sliced green onions.
