- Pork tenderloin - 250 grams, cut into bite-sized pieces
- Bell pepper (red) - 1 medium, diced
- Pineapple chunks - 100 grams, canned in juice
- Onion - 1 small, sliced
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Gluten-free soy sauce - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Honey - 1 tablespoon
- Cornstarch - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Sesame seeds - for garnish
Steps
- In a bowl, mix the gluten-free soy sauce, rice vinegar, honey, and cornstarch to create the sweet and sour sauce.
- Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat.
- Add the pork pieces to the skillet, season with salt and black pepper, and cook until browned on all sides, about 5-7 minutes.
- Remove the pork from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of oil, then add the sliced onion, minced garlic, and ginger. Stir-fry for about 2-3 minutes until the onion is translucent.
- Add the diced bell pepper and pineapple chunks to the skillet, and cook for another 3-4 minutes until the vegetables are tender.
- Return the cooked pork to the skillet and pour in the sweet and sour sauce. Stir well to combine and simmer for 5 minutes until the sauce thickens.
- Serve hot, garnished with sesame seeds, over steamed rice or gluten-free noodles if desired.
