Ingredients
- White fish fillets (such as cod or tilapia) - 300 grams
- Cornstarch - 50 grams
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Egg - 1, beaten
- Vegetable oil - 3 tablespoons (for frying)
- Green bell pepper - 1/2, diced
- Red bell pepper - 1/2, diced
- Pineapple chunks (canned in juice) - 100 grams
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Rice vinegar - 2 tablespoons
- Gluten-free soy sauce - 2 tablespoons
- Honey - 1 tablespoon
- Ketchup - 2 tablespoons
Steps
- Start by patting the fish fillets dry with paper towels, then season with salt and black pepper.
- Coat each fillet in cornstarch, shaking off any excess, and then dip them into the beaten egg.
- Heat the vegetable oil in a large skillet over medium-high heat. Once hot, add the coated fish fillets and fry for about 3-4 minutes on each side until golden brown and cooked through. Remove and set aside on a paper towel to drain excess oil.
- In the same skillet, add the diced green and red bell peppers, and stir-fry for about 2-3 minutes until slightly tender.
- Add the minced garlic and ginger, stirring for about 30 seconds until fragrant.
- In a small bowl, whisk together the rice vinegar, gluten-free soy sauce, honey, and ketchup. Pour this mixture into the skillet with the vegetables and pineapple chunks.
- Bring the sauce to a simmer, allowing it to thicken slightly for about 2-3 minutes.
- Add the fried fish back into the skillet, gently tossing to coat the fillets in the sweet and sour sauce.
- Serve immediately, garnished with chopped green onions if desired.
