Ingredients

  • White fish fillets (such as cod or tilapia) - 300 grams
  • Cornstarch - 50 grams
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Egg - 1, beaten
  • Vegetable oil - 3 tablespoons (for frying)
  • Green bell pepper - 1/2, diced
  • Red bell pepper - 1/2, diced
  • Pineapple chunks (canned in juice) - 100 grams
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Rice vinegar - 2 tablespoons
  • Gluten-free soy sauce - 2 tablespoons
  • Honey - 1 tablespoon
  • Ketchup - 2 tablespoons

Steps

  1. Start by patting the fish fillets dry with paper towels, then season with salt and black pepper.
  2. Coat each fillet in cornstarch, shaking off any excess, and then dip them into the beaten egg.
  3. Heat the vegetable oil in a large skillet over medium-high heat. Once hot, add the coated fish fillets and fry for about 3-4 minutes on each side until golden brown and cooked through. Remove and set aside on a paper towel to drain excess oil.
  4. In the same skillet, add the diced green and red bell peppers, and stir-fry for about 2-3 minutes until slightly tender.
  5. Add the minced garlic and ginger, stirring for about 30 seconds until fragrant.
  6. In a small bowl, whisk together the rice vinegar, gluten-free soy sauce, honey, and ketchup. Pour this mixture into the skillet with the vegetables and pineapple chunks.
  7. Bring the sauce to a simmer, allowing it to thicken slightly for about 2-3 minutes.
  8. Add the fried fish back into the skillet, gently tossing to coat the fillets in the sweet and sour sauce.
  9. Serve immediately, garnished with chopped green onions if desired.
