- Egg - 1 large, beaten
- Cornstarch - 1/4 cup (30 grams)
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable oil - for frying
- Pineapple juice - 1/4 cup (60 ml)
- Rice vinegar - 2 tablespoons (30 ml)
- Honey - 2 tablespoons (30 grams)
- Soy sauce (gluten-free) - 2 tablespoons (30 ml)
- Ketchup - 2 tablespoons (30 grams)
- Bell pepper - 1/2, diced
- Onion - 1/2, diced
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
Steps
- In a medium bowl, combine gluten-free flour, cornstarch, salt, and black pepper.
- Dip each chicken strip into the flour mixture, then into the beaten egg, and back into the flour mixture to coat thoroughly.
- Heat vegetable oil in a skillet over medium heat, enough to cover the bottom of the pan.
- Fry the chicken tenders in batches until golden brown and cooked through, about 4-5 minutes per side. Remove and drain on paper towels.
- In a separate saucepan, combine pineapple juice, rice vinegar, honey, soy sauce, ketchup, minced garlic, and grated ginger over medium heat. Stir until the sauce is heated through and slightly thickened, about 5 minutes.
- Add diced bell pepper and onion to the sauce and cook for an additional 3-4 minutes until softened.
- Toss the fried chicken tenders in the sweet and sour sauce until well coated.
- Serve immediately, garnished with sesame seeds or chopped green onions if desired.
