  • Chicken breast - 300 grams, cut into strips
  • Gluten-free all-purpose flour - 1/2 cup (60 grams)
  • Egg - 1 large, beaten
  • Cornstarch - 1/4 cup (30 grams)
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable oil - for frying
  • Pineapple juice - 1/4 cup (60 ml)
  • Rice vinegar - 2 tablespoons (30 ml)
  • Honey - 2 tablespoons (30 grams)
  • Soy sauce (gluten-free) - 2 tablespoons (30 ml)
  • Ketchup - 2 tablespoons (30 grams)
  • Bell pepper - 1/2, diced
  • Onion - 1/2, diced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated

Steps

  1. In a medium bowl, combine gluten-free flour, cornstarch, salt, and black pepper.
  2. Dip each chicken strip into the flour mixture, then into the beaten egg, and back into the flour mixture to coat thoroughly.
  3. Heat vegetable oil in a skillet over medium heat, enough to cover the bottom of the pan.
  4. Fry the chicken tenders in batches until golden brown and cooked through, about 4-5 minutes per side. Remove and drain on paper towels.
  5. In a separate saucepan, combine pineapple juice, rice vinegar, honey, soy sauce, ketchup, minced garlic, and grated ginger over medium heat. Stir until the sauce is heated through and slightly thickened, about 5 minutes.
  6. Add diced bell pepper and onion to the sauce and cook for an additional 3-4 minutes until softened.
  7. Toss the fried chicken tenders in the sweet and sour sauce until well coated.
  8. Serve immediately, garnished with sesame seeds or chopped green onions if desired.
