  • Green bell pepper - 1, cut into 2.5 cm pieces
  • Pineapple chunks - 100 grams, fresh or canned
  • Olive oil - 2 tablespoons
  • Soy sauce (gluten-free) - 2 tablespoons
  • Honey - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Cornstarch - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Skewers - 4-6 (soaked in water if wooden)

Steps

  1. In a mixing bowl, combine soy sauce, honey, rice vinegar, minced garlic, grated ginger, cornstarch, salt, and black pepper to create the marinade.
  2. Add the diced chicken to the marinade and let it sit for at least 15 minutes to absorb the flavors.
  3. While the chicken is marinating, prepare the vegetables and pineapple, cutting them into 2.5 cm pieces.
  4. Preheat a grill or grill pan over medium-high heat and brush lightly with olive oil.
  5. Thread the marinated chicken, red bell pepper, green bell pepper, and pineapple chunks alternately onto the skewers.
  6. Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  7. Remove the skewers from the grill and let them rest for a few minutes before serving.
