- Red bell pepper - 1, cut into 2.5 cm pieces
- Green bell pepper - 1, cut into 2.5 cm pieces
- Pineapple chunks - 100 grams, fresh or canned
- Olive oil - 2 tablespoons
- Soy sauce (gluten-free) - 2 tablespoons
- Honey - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Cornstarch - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Skewers - 4-6 (soaked in water if wooden)
Steps
- In a mixing bowl, combine soy sauce, honey, rice vinegar, minced garlic, grated ginger, cornstarch, salt, and black pepper to create the marinade.
- Add the diced chicken to the marinade and let it sit for at least 15 minutes to absorb the flavors.
- While the chicken is marinating, prepare the vegetables and pineapple, cutting them into 2.5 cm pieces.
- Preheat a grill or grill pan over medium-high heat and brush lightly with olive oil.
- Thread the marinated chicken, red bell pepper, green bell pepper, and pineapple chunks alternately onto the skewers.
- Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
- Remove the skewers from the grill and let them rest for a few minutes before serving.
