  • Gluten-free all-purpose flour - 1/2 cup (60 grams)
  • Cornstarch - 1/4 cup (30 grams)
  • Egg - 1 large
  • Water - 1/4 cup (60 milliliters)
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable oil - for frying
  • Bell pepper - 1/2, diced
  • Pineapple chunks - 1/2 cup (80 grams), drained
  • Soy sauce (gluten-free) - 2 tablespoons (30 milliliters)
  • Rice vinegar - 2 tablespoons (30 milliliters)
  • Honey - 2 tablespoons (30 grams)
  • Ketchup - 2 tablespoons (30 grams)
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - for garnish

Steps

  1. In a bowl, combine gluten-free all-purpose flour, cornstarch, salt, and black pepper.
  2. In another bowl, whisk the egg and water together, then add to the flour mixture to form a batter.
  3. Heat vegetable oil in a deep pan over medium-high heat.
  4. Dip the diced chicken pieces into the batter, allowing excess to drip off, then fry in batches until golden brown and cooked through (about 5-7 minutes).
  5. Remove chicken bites and place them on paper towels to drain excess oil.
  6. In a separate pan, combine soy sauce, rice vinegar, honey, ketchup, minced garlic, and grated ginger over medium heat, stirring until well mixed and heated.
  7. Add diced bell pepper and pineapple chunks to the sauce, cooking for an additional 2-3 minutes until slightly softened.
  8. Toss the fried chicken bites in the sweet and sour sauce until well coated.
  9. Serve warm, garnished with chopped green onions.
