Ingredients

  • Chicken breast - 300 grams, cubed
  • Cornstarch - 50 grams
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Red bell pepper - 1 medium, diced
  • Green bell pepper - 1 medium, diced
  • Pineapple chunks - 150 grams, drained
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Soy sauce (gluten-free) - 3 tablespoons
  • Rice vinegar - 2 tablespoons
  • Honey - 2 tablespoons
  • Ketchup - 2 tablespoons
  • Water - 100 ml

Steps

  1. In a bowl, combine cubed chicken with cornstarch, salt, and black pepper. Toss until the chicken is well coated.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of olive oil. Sauté the garlic and ginger for about 30 seconds until fragrant.
  4. Add the diced red and green bell peppers to the skillet and stir-fry for 3-4 minutes until they are slightly tender.
  5. Stir in the pineapple chunks and cooked chicken back into the skillet.
  6. In a separate bowl, whisk together the soy sauce, rice vinegar, honey, ketchup, and water until well combined. Pour the sauce over the chicken and vegetables in the skillet.
  7. Bring the mixture to a simmer and cook for an additional 5-7 minutes, stirring occasionally, until the sauce thickens slightly.
  8. Serve hot over steamed rice or gluten-free noodles.
