- Cornstarch - 50 grams
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Red bell pepper - 1 medium, diced
- Green bell pepper - 1 medium, diced
- Pineapple chunks - 150 grams, drained
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Soy sauce (gluten-free) - 3 tablespoons
- Rice vinegar - 2 tablespoons
- Honey - 2 tablespoons
- Ketchup - 2 tablespoons
- Water - 100 ml
Steps
- In a bowl, combine cubed chicken with cornstarch, salt, and black pepper. Toss until the chicken is well coated.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of olive oil. Sauté the garlic and ginger for about 30 seconds until fragrant.
- Add the diced red and green bell peppers to the skillet and stir-fry for 3-4 minutes until they are slightly tender.
- Stir in the pineapple chunks and cooked chicken back into the skillet.
- In a separate bowl, whisk together the soy sauce, rice vinegar, honey, ketchup, and water until well combined. Pour the sauce over the chicken and vegetables in the skillet.
- Bring the mixture to a simmer and cook for an additional 5-7 minutes, stirring occasionally, until the sauce thickens slightly.
- Serve hot over steamed rice or gluten-free noodles.
