Ingredients
- Glutinous rice - 200 grams
- Water - 400 ml
- Mushrooms (shiitake or button) - 100 grams, finely chopped
- Carrot - 50 grams, finely diced
- Green onion - 2 stalks, finely chopped
- Soy sauce (gluten-free) - 2 tablespoons
- Sesame oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cornstarch - 1 tablespoon
- Olive oil - for greasing
Steps
- Soak the glutinous rice in water for at least 4 hours or overnight for best results. Drain and rinse before use.
- In a skillet, heat sesame oil over medium heat. Add the chopped mushrooms, carrots, and green onion. Sauté for about 5-7 minutes until the vegetables are soft.
- Stir in the gluten-free soy sauce, salt, and black pepper. Cook for another 2 minutes, then remove from heat and let the filling cool.
- Preheat your oven to 180°C (350°F).
- In a large bowl, combine the soaked glutinous rice and cornstarch. Mix well until the rice is evenly coated.
- Grease a baking dish with olive oil. Take a small portion of the rice mixture (about the size of a golf ball) and flatten it in your hand to form a small cup. Add a spoonful of the vegetable filling in the center.
- Carefully fold the sides of the rice over the filling to enclose it completely. Shape it into a ball or a dumpling shape and place it in the greased baking dish. Repeat with the remaining rice and filling.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
- After 30 minutes, remove the foil and bake for an additional 15-20 minutes until the dumplings are golden and slightly crispy on the outside.
