Ingredients

  • Glutinous rice - 200 grams
  • Water - 400 ml
  • Mushrooms (shiitake or button) - 100 grams, finely chopped
  • Carrot - 50 grams, finely diced
  • Green onion - 2 stalks, finely chopped
  • Soy sauce (gluten-free) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cornstarch - 1 tablespoon
  • Olive oil - for greasing

Steps

  1. Soak the glutinous rice in water for at least 4 hours or overnight for best results. Drain and rinse before use.
  2. In a skillet, heat sesame oil over medium heat. Add the chopped mushrooms, carrots, and green onion. Sauté for about 5-7 minutes until the vegetables are soft.
  3. Stir in the gluten-free soy sauce, salt, and black pepper. Cook for another 2 minutes, then remove from heat and let the filling cool.
  4. Preheat your oven to 180°C (350°F).
  5. In a large bowl, combine the soaked glutinous rice and cornstarch. Mix well until the rice is evenly coated.
  6. Grease a baking dish with olive oil. Take a small portion of the rice mixture (about the size of a golf ball) and flatten it in your hand to form a small cup. Add a spoonful of the vegetable filling in the center.
  7. Carefully fold the sides of the rice over the filling to enclose it completely. Shape it into a ball or a dumpling shape and place it in the greased baking dish. Repeat with the remaining rice and filling.
  8. Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
  9. After 30 minutes, remove the foil and bake for an additional 15-20 minutes until the dumplings are golden and slightly crispy on the outside.
