  • Red bell pepper (sliced) - 1 medium
  • Carrot (julienned) - 1 medium
  • Green onions (sliced) - 2 stalks
  • Garlic (minced) - 3 cloves
  • Ginger (grated) - 1 teaspoon
  • Gluten-free soy sauce - 3 tablespoons
  • Chili paste (or sriracha) - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Oil (for stir-frying) - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Coriander (fresh, chopped) - for garnish

Steps

  1. Soak the gluten-free rice noodles in hot water for about 10 minutes or until soft, then drain and set aside.
  2. In a large skillet or wok, heat the oil over medium-high heat. Add the minced garlic and grated ginger, stirring for about 30 seconds until fragrant.
  3. Add the sliced chicken breast to the skillet. Season with salt and black pepper. Stir-fry for about 5-6 minutes until the chicken is cooked through.
  4. Add the sliced red bell pepper and julienned carrot to the skillet. Stir-fry for another 3-4 minutes until the vegetables are tender but still crisp.
  5. Stir in the gluten-free soy sauce, chili paste, and sesame oil. Mix well to combine all the ingredients.
  6. Add the soaked rice noodles to the skillet, tossing everything together until the noodles are fully coated and heated through, about 2-3 minutes.
  7. Remove from heat and garnish with sliced green onions and fresh coriander before serving.
