- Soy sauce (gluten-free) - 3 tablespoons
- Chili oil - 1 tablespoon
- Sugar - 1 teaspoon
- Green onions - 2, chopped
- Cilantro - 2 tablespoons, chopped
- Peanuts - 30 grams, crushed (for garnish)
Steps
- Bring a pot of water to a boil and cook the gluten-free rice noodles according to package instructions, usually around 3-5 minutes. Drain and set aside.
- In a large skillet or wok, heat the sesame oil over medium heat. Add the minced garlic and ginger, sautéing for about 1 minute until fragrant.
- Add the crushed Sichuan peppercorns to the skillet, stirring them in and allowing them to infuse the oil for another 30 seconds.
- Stir in the soy sauce, chili oil, and sugar, mixing well.
- Add the cooked rice noodles to the skillet, tossing to coat them evenly with the sauce and heat through for about 2-3 minutes.
- Remove from heat and mix in the chopped green onions and cilantro.
- Serve hot, garnished with crushed peanuts.
