  • Sichuan peppercorns - 1 teaspoon, crushed
  • Soy sauce (gluten-free) - 3 tablespoons
  • Chili oil - 1 tablespoon
  • Sugar - 1 teaspoon
  • Green onions - 2, chopped
  • Cilantro - 2 tablespoons, chopped
  • Peanuts - 30 grams, crushed (for garnish)

Steps

  1. Bring a pot of water to a boil and cook the gluten-free rice noodles according to package instructions, usually around 3-5 minutes. Drain and set aside.
  2. In a large skillet or wok, heat the sesame oil over medium heat. Add the minced garlic and ginger, sautéing for about 1 minute until fragrant.
  3. Add the crushed Sichuan peppercorns to the skillet, stirring them in and allowing them to infuse the oil for another 30 seconds.
  4. Stir in the soy sauce, chili oil, and sugar, mixing well.
  5. Add the cooked rice noodles to the skillet, tossing to coat them evenly with the sauce and heat through for about 2-3 minutes.
  6. Remove from heat and mix in the chopped green onions and cilantro.
  7. Serve hot, garnished with crushed peanuts.
