Ingredients
- Gluten-free all-purpose flour - 150 grams
- Boiling water - 100 ml
- Salt - 1/4 teaspoon
- Sesame oil - 2 tablespoons
- Scallions (green onions) - 4, finely chopped
- Vegetable oil - for frying
Steps
- In a mixing bowl, combine the gluten-free all-purpose flour and salt. Gradually pour in the boiling water while stirring with a fork until a dough forms.
- Once the dough is cool enough to handle, knead it on a lightly floured surface for about 5 minutes until smooth. Cover it with a damp cloth and let it rest for 10 minutes.
- Divide the dough into two equal portions. Roll out one portion into a thin circle (about 20 cm in diameter) on a lightly floured surface.
- Brush the rolled dough with 1 tablespoon of sesame oil and sprinkle half of the chopped scallions evenly over the surface.
- Starting from one edge, roll the dough tightly into a log. Coil the log into a spiral shape, tucking the end underneath. Flatten it gently with your palm.
- Roll the coiled dough into a circle again, about 1 cm thick. Repeat the same steps for the second portion of dough.
- Heat a non-stick skillet over medium heat and add a tablespoon of vegetable oil. Once hot, place one pancake in the skillet and fry for about 3-4 minutes on each side until golden brown and crispy.
- Repeat with the second pancake, adding more oil as needed. Once cooked, remove from the skillet and let them cool slightly before slicing into wedges.
- Serve warm with soy sauce or your favorite dipping sauce.
