Ingredients

  • Gluten-free all-purpose flour - 150 grams
  • Boiling water - 100 ml
  • Salt - 1/4 teaspoon
  • Sesame oil - 2 tablespoons
  • Scallions (green onions) - 4, finely chopped
  • Vegetable oil - for frying

Steps

  1. In a mixing bowl, combine the gluten-free all-purpose flour and salt. Gradually pour in the boiling water while stirring with a fork until a dough forms.
  2. Once the dough is cool enough to handle, knead it on a lightly floured surface for about 5 minutes until smooth. Cover it with a damp cloth and let it rest for 10 minutes.
  3. Divide the dough into two equal portions. Roll out one portion into a thin circle (about 20 cm in diameter) on a lightly floured surface.
  4. Brush the rolled dough with 1 tablespoon of sesame oil and sprinkle half of the chopped scallions evenly over the surface.
  5. Starting from one edge, roll the dough tightly into a log. Coil the log into a spiral shape, tucking the end underneath. Flatten it gently with your palm.
  6. Roll the coiled dough into a circle again, about 1 cm thick. Repeat the same steps for the second portion of dough.
  7. Heat a non-stick skillet over medium heat and add a tablespoon of vegetable oil. Once hot, place one pancake in the skillet and fry for about 3-4 minutes on each side until golden brown and crispy.
  8. Repeat with the second pancake, adding more oil as needed. Once cooked, remove from the skillet and let them cool slightly before slicing into wedges.
  9. Serve warm with soy sauce or your favorite dipping sauce.
